Ingredients:
- 2 lbs (900g) frozen peach slices, unthawed
- ½ cup (100g) light brown sugar, packed
- 1 tbsp (12g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1 tsp (5ml) vanilla extract
- ¼ tsp (1.5g) salt
- 3 tbsp (42g) unsalted butter, melted
- 2 tbsp (25g) turbinado sugar
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the frozen peach slices, brown sugar, cornstarch, cinnamon, lemon juice, vanilla, and salt. Fold gently with a spatula until every slice is coated in a thick, grainy paste.
- Transfer the mixture into a 9x9 inch baking dish, spreading the peaches evenly.
- Drizzle the melted butter over the top and sprinkle the turbinado sugar evenly across the surface.
- Place in the center rack and bake for 35-40 minutes, until the sauce is bubbling vigorously and the top peaches have a deep, golden-brown charred hue.
- Remove from the oven and let the dish rest for 10 minutes to allow the syrup to thicken into a velvety glaze.
