Ingredients:

  • 2 lbs (900g) frozen peach slices, unthawed
  • ½ cup (100g) light brown sugar, packed
  • 1 tbsp (12g) cornstarch
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (5ml) vanilla extract
  • ¼ tsp (1.5g) salt
  • 3 tbsp (42g) unsalted butter, melted
  • 2 tbsp (25g) turbinado sugar

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the frozen peach slices, brown sugar, cornstarch, cinnamon, lemon juice, vanilla, and salt. Fold gently with a spatula until every slice is coated in a thick, grainy paste.
  3. Transfer the mixture into a 9x9 inch baking dish, spreading the peaches evenly.
  4. Drizzle the melted butter over the top and sprinkle the turbinado sugar evenly across the surface.
  5. Place in the center rack and bake for 35-40 minutes, until the sauce is bubbling vigorously and the top peaches have a deep, golden-brown charred hue.
  6. Remove from the oven and let the dish rest for 10 minutes to allow the syrup to thicken into a velvety glaze.
