Ingredients:

  • 1 lb fresh figs, stems removed and halved lengthwise
  • 4 oz Gorgonzola dolce, crumbled
  • 2 tbsp honey
  • 1 tbsp balsamic glaze
  • 1 tsp fresh thyme leaves
  • 1/2 tsp flaky sea salt
  • 1 French baguette, sliced into rounds
  • 2 tbsp extra virgin olive oil

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Brush baguette slices with olive oil. Toast in the oven for 5-7 minutes until golden and crisp.
  3. Place halved figs cut side up on the baking sheet.
  4. Mound about 1 teaspoon (5g) of crumbled Gorgonzola into the center of each fig.
  5. Whisk together the honey and balsamic glaze in a small bowl.
  6. Drizzle the honey balsamic mixture evenly over the cheese and fruit.
  7. Bake for 10-12 minutes until the cheese bubbles and fig edges turn mahogany brown.
  8. Sprinkle with fresh thyme and flaky sea salt immediately while the glaze is still tacky.
