Ingredients:
- 1 lb fresh figs, stems removed and halved lengthwise
- 4 oz Gorgonzola dolce, crumbled
- 2 tbsp honey
- 1 tbsp balsamic glaze
- 1 tsp fresh thyme leaves
- 1/2 tsp flaky sea salt
- 1 French baguette, sliced into rounds
- 2 tbsp extra virgin olive oil
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Brush baguette slices with olive oil. Toast in the oven for 5-7 minutes until golden and crisp.
- Place halved figs cut side up on the baking sheet.
- Mound about 1 teaspoon (5g) of crumbled Gorgonzola into the center of each fig.
- Whisk together the honey and balsamic glaze in a small bowl.
- Drizzle the honey balsamic mixture evenly over the cheese and fruit.
- Bake for 10-12 minutes until the cheese bubbles and fig edges turn mahogany brown.
- Sprinkle with fresh thyme and flaky sea salt immediately while the glaze is still tacky.
