Ingredients:

  • 1 wheel (8 oz / 225g) Brie or Camembert cheese
  • 3 tbsp (45ml) Fig jam or preserves
  • 1 tsp (5ml) Fresh rosemary, finely minced
  • 2 tbsp (30g) Walnuts or pecans, chopped
  • 1 tsp (5ml) Honey

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a 6-inch oven-safe baking dish or small cast-iron skillet with parchment paper to prevent sticking.
  2. Place the cold Brie wheel directly in the center of the prepared baking dish.
  3. Using a butter knife or offset spatula, spread the fig jam in an even layer across the top of the cheese, extending slightly over the edges.
  4. Evenly sprinkle the minced rosemary and chopped walnuts over the jam layer.
  5. Drizzle the honey over the nuts to help them toast and stick to the jam.
  6. Bake on the center rack for 12–15 minutes until the jam is bubbling at the edges and the cheese feels soft when lightly pressed.
  7. Remove from the oven immediately once the edges are golden.
  8. Let it sit for 2 minutes before serving to allow the jam to set slightly.
