Ingredients:

  • 1 baguette (approx 12 oz / 340g), sliced into ½ inch rounds
  • 3 tbsp (42g) melted unsalted butter
  • 8 oz (225g) Brie cheese, chilled
  • ½ cup (170g) fig jam or preserves
  • 2 fresh figs, thinly sliced
  • 1 tbsp (15ml) honey
  • 1 tsp (2g) fresh thyme leaves
  • flaky sea salt to taste

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange the baguette slices in a single layer and lightly brush each with melted butter.
  3. Bake for 5–7 minutes, or until the edges are lightly golden and the bread feels firm to the touch.
  4. Remove the toasted bread from the oven. Place one slice of cold Brie onto each warm crostini.
  5. Top each slice of cheese with a generous dollop (about 1 teaspoon) of fig jam. If using fresh figs, place one thin slice on top of the jam.
  6. Return the tray to the oven for another 3–5 minutes until the Brie becomes bubbling and velvety.
  7. Remove from the oven and immediately drizzle with honey, sprinkle with fresh thyme, and add a pinch of flaky sea salt.
