Ingredients:

  • 1 wheel (8 oz / 225g) Brie cheese
  • 3 tbsp (45ml) Fig jam or preserves
  • 2 tbsp (30g) Walnuts, finely chopped
  • 1 tsp (2g) Fresh rosemary, finely minced
  • 1 tsp (5ml) Honey

Instructions:

  1. Preheat oven to 375°F (190°C). Note: Using a thermometer ensures the cheese doesn't rupture.
  2. Place the brie wheel in a small baking dish.
  3. Score the top rind in a cross hatch pattern of small diamonds. Note: This lets the jam seep in without breaking the seal.
  4. Spoon the fig jam evenly over the top of the brie.
  5. Spread the jam to the edges with a spoon.
  6. Sprinkle the chopped walnuts and minced rosemary over the jam.
  7. Drizzle honey thinly over the walnuts.
  8. Bake for 12–15 minutes until the edges bulge slightly and the jam bubbles.
  9. Remove from the oven.
  10. Let the cheese rest 3–5 minutes until the center stops sloshing.
