Ingredients:

  • 1.5 cups Old Fashioned Rolled Oats
  • 1.25 cups Half and Half
  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 0.5 tsp Baking Soda
  • 1.5 tsp Ground Cinnamon
  • 0.5 tsp Ground Ginger
  • 0.5 tsp Sea Salt
  • 0.5 cup Unsalted Butter, melted and cooled
  • 0.75 cup Packed Light Brown Sugar
  • 1 Large Egg, room temperature
  • 1 tsp Pure Vanilla Extract
  • 2 cups Tart Apples, peeled and diced into 1/2 inch cubes

Instructions:

  1. In a large mixing bowl, combine the rolled oats and the half and half. Let the mixture hydrate for 15 to 20 minutes to soften the oat fiber.
  2. Preheat your oven to 350°F (175°C) and line a 9-inch square baking pan with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and ginger.
  4. Toss the diced apples with one tablespoon of the flour mixture to coat them; this prevents the fruit from sinking during baking.
  5. In a separate bowl, whisk together the melted butter, light brown sugar, egg, and vanilla extract until smooth.
  6. Stir the butter mixture into the soaked oats, then fold in the remaining dry ingredients until just combined.
  7. Gently fold in the floured apples. Pour the batter into the prepared pan and bake for 45 minutes or until the center is set and the top is golden brown.
