Ingredients:
- 1.5 cups Old Fashioned Rolled Oats
- 1.25 cups Half and Half
- 1 cup All-Purpose Flour
- 1 tsp Baking Powder
- 0.5 tsp Baking Soda
- 1.5 tsp Ground Cinnamon
- 0.5 tsp Ground Ginger
- 0.5 tsp Sea Salt
- 0.5 cup Unsalted Butter, melted and cooled
- 0.75 cup Packed Light Brown Sugar
- 1 Large Egg, room temperature
- 1 tsp Pure Vanilla Extract
- 2 cups Tart Apples, peeled and diced into 1/2 inch cubes
Instructions:
- In a large mixing bowl, combine the rolled oats and the half and half. Let the mixture hydrate for 15 to 20 minutes to soften the oat fiber.
- Preheat your oven to 350°F (175°C) and line a 9-inch square baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and ginger.
- Toss the diced apples with one tablespoon of the flour mixture to coat them; this prevents the fruit from sinking during baking.
- In a separate bowl, whisk together the melted butter, light brown sugar, egg, and vanilla extract until smooth.
- Stir the butter mixture into the soaked oats, then fold in the remaining dry ingredients until just combined.
- Gently fold in the floured apples. Pour the batter into the prepared pan and bake for 45 minutes or until the center is set and the top is golden brown.
