Ingredients:
- 6 cups sliced or diced fresh or canned peaches
- 2 tbsp cornstarch
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 cup all-purpose flour
- 1 cup old fashioned rolled oats
- 3/4 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup cold, cubed unsalted butter
Instructions:
- Preheat your oven to 375°F (190°C).
- Place the sliced peaches directly into a 9x9 inch baking dish.
- Scatter the brown sugar, cornstarch, cinnamon, and lemon juice over the fruit, tossing gently with a spatula until evenly coated.
- In a mixing bowl, whisk together the flour, oats, brown sugar, cinnamon, and salt.
- Add the cold, cubed butter and use a pastry cutter or fork to work the butter into the dry ingredients until coarse crumbs with pea-sized lumps form.
- Sprinkle the crumble mixture evenly over the peach layer, pressing down very lightly.
- Bake for 45–50 minutes until the fruit juices are bubbling up the sides and the topping is deep golden brown.
