Ingredients:

  • 6 cups sliced or diced fresh or canned peaches
  • 2 tbsp cornstarch
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • 1 cup old fashioned rolled oats
  • 3/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold, cubed unsalted butter

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the sliced peaches directly into a 9x9 inch baking dish.
  3. Scatter the brown sugar, cornstarch, cinnamon, and lemon juice over the fruit, tossing gently with a spatula until evenly coated.
  4. In a mixing bowl, whisk together the flour, oats, brown sugar, cinnamon, and salt.
  5. Add the cold, cubed butter and use a pastry cutter or fork to work the butter into the dry ingredients until coarse crumbs with pea-sized lumps form.
  6. Sprinkle the crumble mixture evenly over the peach layer, pressing down very lightly.
  7. Bake for 45–50 minutes until the fruit juices are bubbling up the sides and the topping is deep golden brown.
